Itoigawa is a treasure trove of fresh ingredients, blessed with "fresh seafood from the Sea of Japan" such as crab, sweet shrimp, seikai fish, yellowtail, flounder, monkfish, cod, and whelk. With the arrival of spring and snowmelt, "mountain delicacies" like kogome (fiddlehead ferns), tara no me (angelica tree shoots), udo (aralia sprouts), and udo-buki also become available. In addition, the Hime River flowing in front of our inn was selected as the cleanest stream in Honshu in 2001 for its pristine water quality. In this rich environment where "water is delicious and ingredients are abundant," we carefully select seasonal ingredients daily to create exquisite dishes with utmost dedication.
